Shun Knives

I thought we'd take the time to go over our knife collection here at Hi Fi Art.

We use this one most often, so it's good to keep a selection of replacements. Ideally, when the knives dull, you'll wish to replace the blade.

The Shun Premier 7-in. Santoku (x2) is our favourite.

It's a utility knife, given the set is Japanese. The Santoku comes in 5 1/2" (cute) and Sumo versions, also. We like the 7" x2 for two handed operation.

The Shun Premiere 10" Chef's Knife. We keep the 8", also. The 10" is the most impressive. 6" not taken.

If you're a cuisinaire, you'll only sharpen your knives on stones. We've only used them on Zigian and Sabian cymbals, which dulls them, rather quickly. If you consider yourself "odd job" you can sharpen the edges of splash symbols to great effect also.

We keep this in a Kussi knife saver. They're incredibly sexy, and a great fit.

This is standard issue fare. The closest to a working knife in the Shun Collection. In other words, the most practical.

We keep two blocks of Shun knives, and others "off the block" in Kussi sheeves.

There is something Jungian about our collecting of two sets - one general, one specialized and collected, before obtaining a professional set.

Of recent note and intreresting introduction is Shun Premiere Kiritsuke 8-in. It's not a Morrimoto

The sexiest component in the Shun Collection is the Slot Drawer (11SL). There is something incredibly sexy about a bunch of slots in drawers. What ever you may have (13 1/2" etc.), you may take comfort in the Shun Premiere Stemware Collection.
