What's with the trend of higher, and ever higher percentage, in CACAO?

I mean, you have Lindt 70% Excellence in a Chocolate Bar and it's excellent. It's great. You have Ecuador 75%, and you assume it's going to be great - it's from Eduador where coffee is made, after all - and yet it's not at all in the slightest. You have 85% Cacao Intense (in Dark), and it's only a little more (not that stronger, really) and you assume finally, finally, it's going to be fine. And it tastes like ...

You think maybe 95% will still be all-right

You have Leclerc Celebration Chocolate Noir / Dark Chocolate 45% Cookie with it's Grand Hotel motif, and maybe you will have / own a grand hotel in your lifetime.

Here in Canada, for Grand Hotels, we have the Fairmont Hotel Royal York in Toronto, and the Fairmont Frontenac in Montreal (ok, Quebec City).
