Shun Reserve

With our Premier collection almost complete, we're contemplating getting three Shun Reserve knives. Most knives come in 3-sets. The only models we'd get would be the Shun Reserve Pairing 3.5" - it's a very good pairing - the Shun Reserve Santoku Granton Edge 7" - you want a Granton edge - and the Shun Rerserve Chef 8" - there is something a little Wurstof about it. 8" is a little to small for a Chef Knife - you'd want a 10, preferably.

In person, the Zwilling [$ to $ USD] by Bob Kramer are much, might nicer. There is nothing wrong with the handle of either one, but we like the bit and the mounting arrangement of the Zwilling much much, more.

The set would come to about $1000.00 USD. For $1/day you could get the Shun Reserve Chef 6" Granton Edge. There is something a little meaty about it, but the handle matches the shape of the blade, perfectly. It's great, rather ideal for slicing asparagus.

We examined the Shun Reserve in person (pairing and Granton edge), and the handle has red accents on two sides, like the new Vladimir Putin Cartier Santos de Cartier (T8200782 and T8200784 ... $1,690.00 USD) Sunwear models. [10/09]

Wood and Gold Pamela 02 in reflective lenses [new] have similar grey-wood sides with the Bob Kramer by Zwilling set we examined by comparison.

To be fair, we satisfactorily examined the Shun Blue Kiritsuke 10" in person. It has a nice thick bevel and satisfactorily wide non-blade with ruthenium finish with a look like on a silver mirror.

We will contact Shun to see if they will produce a Knife set based on their Shun Reserve Knife series. That is, with the Wakame finish we like so much on their Premier, yet the absolute knife shapes of their Reserve, and premier-ally, the Rockwell hardness and steel of Miyabi.

It's a miniature Katana, of course, the Blue, and not at all long in person, but most fit to slice a sprig of parsley.
